Seed & Nut Bread

A dense, hearty homemade bread packed with seeds, nuts, oats, and fiber. Delicious fresh and especially good toasted the next day.

Ingredients

Dry ingredients

  • ½ cup rolled oats

  • 1 cup sunflower seeds

  • ½ cup flax seeds

  • ½ cup sliced or chopped almonds or walnuts

  • ½ cup pumpkin seeds

  • 3 tbsp psyllium husk

  • 2 tbsp chia seeds

  • 1 tbsp finely ground Himalayan salt

Wet ingredients

  • 3 tbsp extra-virgin olive oil

  • ½ cup water

Directions

  1. Combine all the dry ingredients in a large bowl.

  2. Add the olive oil and water. Mix thoroughly until everything is evenly moistened.

  3. Transfer to a parchment-lined loaf pan and press the mixture down firmly.

  4. Cover and let it rest for at least 6 hours or overnight, preferably refrigerated.

  5. Preheat the oven to 190°C / 375°F

  6. Bake for 40–45 minutes, until the loaf is firm and lightly browned.

  7. Let it cool completely before slicing.

Tip: The mixture should be moist and hold together when pressed. If it still looks very dry after mixing, add 1–2 tablespoons of water at a time.

Enjoy it fresh or toast it the next day for an even better texture.
