High-Protein Blueberry Cupcakes
A simple high-protein snack made with cottage cheese, cashew flour, Greek yogurt, protein powder and blueberries. Soft, naturally sweet, and made with no added sugar.

Ingredients
1 cup (about 225 g) 0.5% dry cottage cheese
⅓ cup plain Greek yogurt
1 large egg
2 scoops vanilla protein powder
100 g raw cashews, finely ground into flour
1 cup frozen blueberries
1 tbsp arrowroot powder
1 tsp olive oil
Directions
Blend the cottage cheese, Greek yogurt, egg and protein powder until smooth and well combined. Stir in the ground cashews and arrowroot powder, then gently fold in the blueberries. Divide the batter evenly among 8 muffin cups. Bake at 200°C (400°F) for 16–20 minutes, or until the tops are set and lightly golden.
